Sauces to go with your Fufu

To get under the skin of Benin and Togo we were eating where the locals eat – in “maquies” – small eatery, often by the road, very cheap and more often than not – very good. Usually serving a few types of carbs e.g. fufu, rice, “pate”, deep fried plantain etc.. with a choice of meaty/fishy or vegetable sauses. 

 
Fufu is a boiled cassava root, battered with sticks until it becomes a consistent starchy blob.  Here is a video of this dish in the making.
